Smoky Pancetta, Sweet Onion, And Green Lentil Soup

Ingredients:

  • 4 tbsp. Extra virgin olive oil
  • sea salt
  • fresh cracked pepper
  • 1 onion, chopped
  • 1.2 litres chicken stock
  • 300 g green lentils, canned
  • 250 g pancetta, diced
  • 2 tbsp. Flat leaf parsley, chopped

Directions:

  1. In a large saucepan, heat 3 tbsp. Olive oil, add onions, saute and season
  2. Add the stock and bring to a boil, add the lentils, and turn down to a simmer, season
  3. In a separate sauce pan, fry the pancetta until crispy, add to the soup
  4. Garnish with parsely
