Smoky Pancetta, Sweet Onion, And Green Lentil Soup
Ingredients:
- 4 tbsp. Extra virgin olive oil
- sea salt
- fresh cracked pepper
- 1 onion, chopped
- 1.2 litres chicken stock
- 300 g green lentils, canned
- 250 g pancetta, diced
- 2 tbsp. Flat leaf parsley, chopped
Directions:
- In a large saucepan, heat 3 tbsp. Olive oil, add onions, saute and season
- Add the stock and bring to a boil, add the lentils, and turn down to a simmer, season
- In a separate sauce pan, fry the pancetta until crispy, add to the soup
- Garnish with parsely
2-4 servings
