Thai Seared Sirloin Beef Salad with Spicy, Citrus Dressing
Ingredients:
- 400 g sirloin steak
- 2 tbsp cilantro leaves
- 2 cloves garlic, minced
- 2 x 2 tbsp olive oil
- 1 cup cherry tomatoes
- 4 cups spring salad mix
- 4 tbsp green onions, chopped
- 1 yellow pepper, julienne
- 1/2 L.E. cucumber, sliced
- 4 spears Belgian endive
- Enoki mushrooms, garnish
- sea salt
- fresh cracked pepper
Spicy Citrus Dressing
- 1 tbsp Thai fish sauce
- 2 limes, juiced
- 4 tbsp sweet Indonesian soy
- 1 tbsp ginger, minced
- 2 shallots, sliced
- 2 tbsp rice vinegar
- 6 tbsp extra virgin olive oil
- 2 Thai chillies (or sambel olek paste)
- Sea salt
Directions:
- Combine the garlic, cilantro, salt, pepper, and olive oil in a shallow pan. Season the steak and place into shallow pan. Turn a couple of times, and let marinate for at least 20 minutes.
- Heat 2 tbsp olive oil in a skillet. Add the steak and cook each side for about 4 minutes. Remove from the heat to rest and cool slightly
- Prepare the dressing: simply whisk all ingredients in a bowl
- Place greens, cherry tomatoes, peppers, cucumbers, green onions, and seasoning in a bowl. Add dressing and toss
- Place greens onto 4 plates, garnish with endive and enoki mushrooms
- Slice beef on bias and fan onto salads
