Grapefruit, Avocado, Raspberries and Watercress Salad
Ingredients:
- 1 bunch watercress
- 2 pink grapefruits, segmented
- 2 avocados, sliced
- Sea salt, fresh cracked pepper
- Extra virgin olive oil
- Italian parsley, chopped
- 1/2 cup fresh raspberries
- Balsamic vinegar
- 2 cups spring salad mix
- 1 red onion, sliced finely
Directions:
- Simply place all ingredients in a bowl, season, and add 2 parts extra virgin olive oil and 1 part balsamic vinegar.
- Toss gently, and serve on a platter or individually.Serve 4Heart Smart / Healthy Choice Appetizer.
