Grapefruit, Avocado, Raspberries and Watercress Salad

Ingredients:

  • 1 bunch watercress
  • 2 pink grapefruits, segmented
  • 2 avocados, sliced
  • Sea salt, fresh cracked pepper
  • Extra virgin olive oil
  • Italian parsley, chopped
  • 1/2 cup fresh raspberries
  • Balsamic vinegar
  • 2 cups spring salad mix
  • 1 red onion, sliced finely

Directions:

  1. Simply place all ingredients in a bowl, season, and add 2 parts extra virgin olive oil and 1 part balsamic vinegar.
  2. Toss gently, and serve on a platter or individually.Serve 4Heart Smart / Healthy Choice Appetizer.
