Beetroot And Potato Salad With Seared Red Chillies
Ingredients:
- 1 tbsp. Extra virgin olive oil
- 1 tsp. Cumin, crushed
- 1.5 tsp. Rai (black mustard seeds)
- 4 red chillies, chopped
- 4-5 limro (fresh curry leaves)
- 2 beetroots (boiled/ cut)
- 1 potato (boiled, peeled, cut)
- 2 cups yogurt
- Sea salt
- 1/2 tsp. Sugar
- 1/4 cup cilantro, chopped
Directions:
- Heat the olive oil in a saute pan, add the chillies and sear for 1 minute.
- Add the cumin, mustard seeds, and curry leaves. Cover until the seeds have popped.
- Let cool, and then add the beetroot and potato.
- Mix the yogurt with the salt, and sugar and pour over the beetroot mixture
- Garnish with fresh chopped cilantro
