Beetroot And Potato Salad With Seared Red Chillies

Ingredients:

  • 1 tbsp. Extra virgin olive oil
  • 1 tsp. Cumin, crushed
  • 1.5 tsp. Rai (black mustard seeds)
  • 4 red chillies, chopped
  • 4-5 limro (fresh curry leaves)
  • 2 beetroots (boiled/ cut)
  • 1 potato (boiled, peeled, cut)
  • 2 cups yogurt
  • Sea salt
  • 1/2 tsp. Sugar
  • 1/4 cup cilantro, chopped

Directions:

  1. Heat the olive oil in a saute pan, add the chillies and sear for 1 minute.
  2. Add the cumin, mustard seeds, and curry leaves. Cover until the seeds have popped.
  3. Let cool, and then add the beetroot and potato.
  4. Mix the yogurt with the salt, and sugar and pour over the beetroot mixture
  5. Garnish with fresh chopped cilantro
