Lobster Salad 1

Ingredients:

  • 240 g lobster meat
  • 4 cups red oak leaf lettuce
  • sea salt
  • fresh cracked pepper
  • 2 limes, juiced
  • 200 ml artichokes, sliced
  • 2 avocado, cubed
  • 125 ml mayonnaise
  • 2 tbsp sweet chilli sauce
  • 1 tbsp. Ginger, chopped
  • 1 yellow pepper, julienne
  • 1/2 red onion, sliced
  • 1 lemon, juiced
  • 1 bunch white asparagus, trimmed

Directions:

  1. Firstly prepare the dressing; place the mayo, ginger, salt, pepper, sweet chilli sauce, and lime juice in a bowl, blend. Put aside
  2. Blanch the white asparagus in salted, boiling water until fork tender. Shock in ice water to stop the cooking, drain, and put aside.
  3. Cut red leaf into small strips or cubes. Place in a large bowl with the rest of the ingredients.
  4. Season the salad and add the dressing, toss gently and arrange onto 4 plates
