Lobster Salad 1
Ingredients:
- 240 g lobster meat
- 4 cups red oak leaf lettuce
- sea salt
- fresh cracked pepper
- 2 limes, juiced
- 200 ml artichokes, sliced
- 2 avocado, cubed
- 125 ml mayonnaise
- 2 tbsp sweet chilli sauce
- 1 tbsp. Ginger, chopped
- 1 yellow pepper, julienne
- 1/2 red onion, sliced
- 1 lemon, juiced
- 1 bunch white asparagus, trimmed
Directions:
- Firstly prepare the dressing; place the mayo, ginger, salt, pepper, sweet chilli sauce, and lime juice in a bowl, blend. Put aside
- Blanch the white asparagus in salted, boiling water until fork tender. Shock in ice water to stop the cooking, drain, and put aside.
- Cut red leaf into small strips or cubes. Place in a large bowl with the rest of the ingredients.
- Season the salad and add the dressing, toss gently and arrange onto 4 plates
