Grilled Stuffed Pork Loin
This is a variant of a recipe from Steven Raichlen’s How to Grill that came from my friend David McDonald.
Ingredients:
- 1 Pork Loin Roast
- Several Strips of Bacon
- Coarse Salt and Pepper to season
- Pesto Sauce
Directions:
- Butterfly or Roll cut the roast to create a flat piece about 1/2 inch thick. Season with Salt and Pepper
- Spread out pesto sauce to cover flatted roast.
- Roll roast back up. Cover with strips of bacon and tie.
- Cook on barbeque with indirect heat until pork has an internal temperature of 160 degrees Fahrenheit, about one hour.
