Grilled Stuffed Pork Loin

Grilled Stuffed Pork LoinThis is a variant of a recipe from Steven Raichlen’s How to Grill that came from my friend David McDonald.

Ingredients:

  • 1 Pork Loin Roast
  • Several Strips of Bacon
  • Coarse Salt and Pepper to season
  • Pesto Sauce

Directions:

  1. Butterfly or Roll cut the roast to create a flat piece about 1/2 inch thick. Season with Salt and Pepper
  2. Spread out pesto sauce to cover flatted roast.
  3. Roll roast back up. Cover with strips of bacon and tie.
  4. Cook on barbeque with indirect heat until pork has an internal temperature of 160 degrees Fahrenheit, about one hour.
  5. 4 servings
