Fajita Quesadillas
This recipe comes from my brother-in-law Norm. And provides all the flavor of fajitas with the ease of quesadillas for consumption.
Ingredients:
Fajita Quesadillas
- 4 Chicken Breast
- 1 Green Pepper
- 1 Medium Onion
- 8 Tortilla Shells
- 1 cup Cheddar Cheese, grated
- 1/4 cup Monterey Jalapeño Jack Cheese, grated
- 1 cup Salsa
- Hot Sauce to Taste
- 1 tsp Cajun Spice
Marinade
- 1/4 cup oil
- 1/2 cup lemon juice
- 2 cloves minced garlic.
- Ground Pepper
Directions:
- Slice chicken into strips 1/2 inch wide. Mix marinade ingredients and marinade chicken for one hour.
- Cut green pepper and onions into strips. Sauté and set a side.
- Sauté chicken until cooked through. At very end sprinkle with Cajun spice and hot sauce and mix. Remove from heat and set a side.
- Take a tortilla shell and fill with chicken and green pepper and onion mixtures. Sprinkle with Ground Pepper, and cheddar cheese. Optionally Add extra salsa.
- Roll up and place in microwave safe baking dish.
- Microwave to heat for approx 8 minutes (1 minute per to roll)
- Remove from microwave and cover with salsa and Monterey Jack cheese.
- Add to preheated to 400 degree oven, for 5 minutes (or until cheese is bubbling.)
- Serve with sour cream.
