Thai Beef Satay, And Peanut Sauce, On A Bed Of Crisp Salad Greens
Ingredients:
- 2 lbs. Beef filet, sliced
- sea salt
- fresh cracked pepper
- 1 cup coconut milk
- 1 tsp turmeric
- 1 tsp. Curry powder
- 2 tsp. Fish sauce
Peanut Sauce
- 2 tbsp. Curry paste
- 1 cup coconut milk
- 3 tbsp. Crunchy peanut butter
- 3 cups spring salad mix
- sea salt
- fresh cracked pepper
- Dressing/Vinaigrette of choice
Directions:
Prepare the meat
- ; cut the meat into slices and then into strips and thread onto bamboo skewers.
Prepare the marinade
- ; place 1 cup coconut milk, curry, turmeric, salt, pepper, and fish sauce into a shallow tray and place the satays in marinade. Marinade for 2 hours, turning from time to time
- Prepare the peanut sauce; fry curry paste in pan for 2 minutes, add coconut milk, and heat well. Add peanut butter and stir until all the ingredients are well combined
- Preheat bbq., season, and place satays on, turning only once. They should only take a couple of minutes.
- Serve with sauce and crisp greensServe 47 grams carbs.
