Texas Style Spanish Rice
Ingredients:
- 50ml green pepper, diced
- 25ml extra virgin olive oil
- 250 ml uncooked longrain rice
- 125 ml plum tomatoes,crushed
- 1 ml ground tumeric
- 5 ml ground cumin
- Salt/fresh cracked pepper
- 1 clove garlic, minced
- 500ml chicken stock
- 25 ml green chiles
- 25 ml parsley, chopped
Directions:
- In a skilllet add oil, add onions and sear for 2 minutes, season
- Add rice and saute for 1 minute
- Add tomatoes, tumeric,cumin, and garlic, saute for 2 minutes
- Add chicken stock
- Bring to a boil, reduce heat and simmer for 15 minutes, covered
- Remove cover and add chilies, green pepper and parsley
- Continue to cook for 2 minutes, or until rice is tender
