Zabaglione Sicilian Style
Ingredients:
- 4 egg yolks 1/3 cup caster sugar
- 1/3 cup Marsala
- Fresh fruit
- Blackberries, strawberries, mango, kiwi fruit./ soaked in brandy or liqueur.
Directions:
- Combine yolks, sugar and marsala in a large heatproof bowl set over a pan of barely simmering water.
- Wisk with a ballon wisk or electric beaters until the mixture is smooth and foamy and has tripled in volume.
- Do not stop wisking and do not allow the bowl to become too hot or the eggs will scramble.
- The final result will be creamy, pale and mousse-like.
- Pour the mixture over top of the fruit; if so desired you can place under a grill on low heat until the surface turns golden brown
