Zabaglione Sicilian Style

Ingredients:

  • 4 egg yolks 1/3 cup caster sugar
  • 1/3 cup Marsala
  • Fresh fruit
  • Blackberries, strawberries, mango, kiwi fruit./ soaked in brandy or liqueur.

Directions:

  1. Combine yolks, sugar and marsala in a large heatproof bowl set over a pan of barely simmering water.
  2. Wisk with a ballon wisk or electric beaters until the mixture is smooth and foamy and has tripled in volume.
  3. Do not stop wisking and do not allow the bowl to become too hot or the eggs will scramble.
  4. The final result will be creamy, pale and mousse-like.
  5. Pour the mixture over top of the fruit; if so desired you can place under a grill on low heat until the surface turns golden brown
