Baked Maple, Honey Glazed Smoked Ham with Brussel Sprouts Almondine and Roasted Garlic Mashed Red Potatoes
Ingredients:
- 1 7-8 pound smoked ham
- 2 oranges, juiced
- 1 cup honey
- 1/2 cup pure maple syrup
- 1 tsp. Nutmeg
- 1 tsp. Whole cloves
- 1 tbsp. Butter
- brussel sprouts
- 1/2 cup slivered almonds, toasted
- 2 tbsp. Butter
- sea salt
- fresh cracked pepper
- 3 # red potatoes
- 6 - 8 cloves garlic
- 1 tbsp. Extra virgin olive oil
- 1/2 cup milk
Directions:
- Preheat oven to 375’f
- Prepare glaze; melt butter and place in a bowl, add honey, maple syrup, nutmeg, and orange juice, blend.
- Remove the outer skin of the ham and trim off excess fat. Score the ham into a checker board effect. Spike the ham with cloves, place ham in a large roasting pan and brush all over with glaze.
- Place ham in the oven for approx. 2 hours, basting often
- Meanwhile prepare the potatoes; place potatoes in salted water and boil until fork tender.
- In a skillet add olive oil, heat and add garlic, cook all sides until golden. Puree garlic, put aside.
- Clean the brussel sprouts and make a criss-cross incision on the bottom of the sprout. Place in salted, boiling water for approx. 3 minutes. Shock in ice water to stop the cooking.
- Assemble the meal by mashing the potatoes, season, add garlic, and blend in milk.
- In a skillet melt butter, and add sprouts, almonds, and season
- Slice the ham into medium- thin slicesServes8 people.
