Cranberry and White Chocolate Chip Muffins
Well here is one of Emery’s favorites. In fact Jeaniene got the recipe from her friend Brenda. After she was given one Jeaniene made the “mistake” of sharing with Emery and was lucky she got a bite out of their muffin.
Ingredients:
- 2 cups all-purpose flour
- 1/3 cup Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/4 cup Orange Juice
- 2 tablespoons Vegetable Oil
- 1 tablespoons Pure Vanilla Extract
- 1 cup Low-Fat Yogurt, Vanilla
- 1 large egg, lightly beaten
- 1 cup Cranberries fresh or frozen (thawed)
- 1 cup White Chocolate Chips
Directions:
- Preheat oven to 400F.
- Combine flour, sugar, baking soda, backing powder, and salt in a large bowl; stir well, and make a well in the centre of mixture.
- Combine orange juice, oil, vanilla extract, yogurt and egg in a bowl; stir well. Add to flour mixture, stirring just until moist. Gently fold in cranberries & white chocolate chips.
- Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400F for 18 minutes or until golden.
- Remove from pans immediately; let cool on a wire rack.
Variation: Substitute cranberries and white chocolate chips with blueberries.
