Quick Chocolate Mousse

Ingredients:

  • 500ml whipping cream, whipped
  • 25 ml icing sugar
  • 1 vanilla bean
  • 250 ml vanilla cream
  • 100 gr. Lindt milk chocolate
  • 50 ml brandy
  • 50 ml. Milk
  • fresh mint for garnish

Directions:

  1. Add chocolate to a double boiler and melt
  2. In a bowl whisk whipping cream and icing sugar to a stiff peak
  3. Scrape the inside of the vanilla bean and add to the whipped cream
  4. Add brandy and milk to the chocolate and blend
  5. Fold vanilla cream into the whipped cream gently
  6. Fold chocolate gently into mixture
  7. Scoop into parfait glasses, chill and garnish with fresh mint leaf and strawberry
