Meringues au Chocolat

Ingredients:

  • 3 large egg whites
  • 1/8 tsp. Cream of tartar
  • 3/4 cup granulated sugar
  • 3 tbsp. Unsweetened cocoa powder
  • 1/4 cup icing sugar (optional)

Directions:

  1. Preheat oven to 375’f.
  2. Cover 2 baking sheets with parchment paper.
  3. Place the egg whites and cream of tartar in a kitchen aid, beat on medium speed until soft peaks form (or electric mixer).
  4. Gradually beat in the granulated sugar, beat on high speed until the whites are stiff and shiny.
  5. Sift the cocoa over the egg whites and gently fold in just until blended.
  6. Drop tbsp. of batter 1 inch apart from each other.
  7. Bake for 30-35 minutes.
  8. Peel the cookies away from the paper, and cool on a wire rack.
  9. When cookies are cool you can dust with icing sugar.
  10. These cookies can be served with fresh berries, and non-fat yoghurt, or ice cream if so desired.
