Meringues au Chocolat
Ingredients:
- 3 large egg whites
- 1/8 tsp. Cream of tartar
- 3/4 cup granulated sugar
- 3 tbsp. Unsweetened cocoa powder
- 1/4 cup icing sugar (optional)
Directions:
- Preheat oven to 375’f.
- Cover 2 baking sheets with parchment paper.
- Place the egg whites and cream of tartar in a kitchen aid, beat on medium speed until soft peaks form (or electric mixer).
- Gradually beat in the granulated sugar, beat on high speed until the whites are stiff and shiny.
- Sift the cocoa over the egg whites and gently fold in just until blended.
- Drop tbsp. of batter 1 inch apart from each other.
- Bake for 30-35 minutes.
- Peel the cookies away from the paper, and cool on a wire rack.
- When cookies are cool you can dust with icing sugar.
- These cookies can be served with fresh berries, and non-fat yoghurt, or ice cream if so desired.
