Heavenly Macadamia Nut Mousse
Ingredients:
- 1 cup heavy cream
- 8 oz. Cream cheese
- 2 tbsp. Unsweetened peanut butter
- 1 tbsp. Unsweetened cocoa powder
- 1 cup splenda granular
- 1/2 cup macadamia nuts
Directions:
- Allow cream cheese to come to room temperature
- Beat cream cheese for several minutes to a smooth consistency , add splenda, peanut butter, cocoa powder, and macadamia nuts. Set aside.
- Beat heavy cream until peaks form, and set aside
- Incorporate one scoop of the whipped cream into the cream cheese mixture first, to lighten it. Then, by hand, using a rubber spatula, fold in remaining whipped cream. Do not over mix.
- Cover and refrigerate for 1 hour
