Heavenly Macadamia Nut Mousse

Ingredients:

  • 1 cup heavy cream
  • 8 oz. Cream cheese
  • 2 tbsp. Unsweetened peanut butter
  • 1 tbsp. Unsweetened cocoa powder
  • 1 cup splenda granular
  • 1/2 cup macadamia nuts

Directions:

  1. Allow cream cheese to come to room temperature
  2. Beat cream cheese for several minutes to a smooth consistency , add splenda, peanut butter, cocoa powder, and macadamia nuts. Set aside.
  3. Beat heavy cream until peaks form, and set aside
  4. Incorporate one scoop of the whipped cream into the cream cheese mixture first, to lighten it. Then, by hand, using a rubber spatula, fold in remaining whipped cream. Do not over mix.
  5. Cover and refrigerate for 1 hour
