Papaya Lime Fool
Ingredients:
- 2 papaya, about 1 kg
- 2 tbsp fresh lime juice
- 1 vanilla bean, seeded
- 3 tbsp splenda
- 1 1/4 cups (315 ml) heavy cream
Directions:
- Peel the papaya, remove the seeds and mash the flesh until smooth. Do not do this in a food processor or the fruit will be too runny
- Scrape the vanilla bean into the splenda and mix.
- Add the lime juice and vanilla splenda to taste- the amount will vary according to the sweetness of the fruit
- Whisk the cream until soft peaks form, then fold through the mashed papaya
- Spoon into serving glasses and chill until ready to serve
