Papaya Lime Fool

Ingredients:

  • 2 papaya, about 1 kg
  • 2 tbsp fresh lime juice
  • 1 vanilla bean, seeded
  • 3 tbsp splenda
  • 1 1/4 cups (315 ml) heavy cream

Directions:

  1. Peel the papaya, remove the seeds and mash the flesh until smooth. Do not do this in a food processor or the fruit will be too runny
  2. Scrape the vanilla bean into the splenda and mix.
  3. Add the lime juice and vanilla splenda to taste- the amount will vary according to the sweetness of the fruit
  4. Whisk the cream until soft peaks form, then fold through the mashed papaya
  5. Spoon into serving glasses and chill until ready to serve
