Laddoo

Ingredients:

  • 1 lb. Gram flour
  • 1/2 cup melted ghee or clarified butter
  • 1/2 can evaporated milk
  • 1/4 tsp. Yellow food colouring
  • 2 cups water
  • 2 lbs. Ghee (for deep frying)
  • 4 oz. Blanched almonds, slivered
  • 3 oz. Pistachios, slivered
  • 4 oz. Raisins or sultanas
  • 1/4 cup cardamom seeds, crushed

Directions:

  1. Sift the gram flour into a medium bowl, add melted ghee, evaporated milk, food colouring and water. Make a smooth batter, slightly thicker than pancake batter
  2. Now heat the 2 lbs. Ghee in a wok on medium high heat. Hold a colander over the wok and pour 1-2 cups of the batter in it. Shake the colander or stir with a wooden spoon so the drops of batter will fall into the wok to make dumplings. Fry the dumplings for 2 minutes. Remove and put aside. Use remaining batter.
  3. Blend dumplings in food processor to coarsely crush them
  4. Fry the almonds and pistachios for 1 minute in the same ghee on medium heat
  5. Remove ghee, keeping 1-2 cups to fry raisins on medium heat until they become plump. Remove the raisins and set aside.
  6. Combine the crushed dumplings with the cardamom, almonds, pistachios, and raisins
