Traditional Indian Rice Pudding With Grilled Caramelized Bananas And Fresh Fruit
Ingredients:
- 1/4 cup rice
- 1 litre milk (homogenized)
- 4 tbsp. Sugar
- 1/2 tsp. Cardamom powder
- 1/4 cup sliced almonds and cashew nuts
- 2 tbsp. Raisins
- 2 bananas, sliced
- 1/4 cup strawberries, sliced
- 1/4 cup blueberries
- 1/4 cup Demerara sugar
- 1 tbsp. Butter
Directions:
- Boil milk in a pan
- Add rice, cardamom, raisins, and half the quantity of sliced almonds and cashew nuts. Bring one boil and then reduce the heat to medium. Cook until it becomes thick and creamy. Stir occasionally.
- Add sugar and cook for 5 minutes
- Put kheer in a serving bowl and chill
- Meanwhile heat a skillet, melt butter add brown sugar, dissolve, add bananas, stir, and cook for 3 minutes, add rest of fruit, cook for an additional 2 minutes.
- Fruit can be chilled if desired.
- Serve with kheer
