Coconut and Passion Fruit Individual Valhrona Chocolate Lined Tarts

Ingredients:

  • 8 tart shells
  • 75 g valhrona chocolate, melted

Filling

  • 1/2 cup strained passion fruit juice
  • 100 g desiccated coconut
  • 1 lemon, rind
  • 1-2 cups pastry cream refer to recipe

Directions:

  1. Prepare 1/4 of the pastry cream recipe. Let cool. Put aside.
  2. Bake tart shells as per directions, let cool
  3. Meanwhile prepare a double boiler, place chocolate in a bowl over boiling water, blend until melted. Using a pastry brush, brush the melted chocolate onto the base of the tarts. Set aside
  4. In a small skillet add coconut, cook on medium heat until golden, stirring constantly
  5. In a bowl place pastry cream, blend lemon rind, coconut, and passion fruit juice together
  6. Fill the tarts with the mixture. Can be garnished with fruit if so desired
