Coconut and Passion Fruit Individual Valhrona Chocolate Lined Tarts
Ingredients:
- 8 tart shells
- 75 g valhrona chocolate, melted
Filling
- 1/2 cup strained passion fruit juice
- 100 g desiccated coconut
- 1 lemon, rind
- 1-2 cups pastry cream refer to recipe
Directions:
- Prepare 1/4 of the pastry cream recipe. Let cool. Put aside.
- Bake tart shells as per directions, let cool
- Meanwhile prepare a double boiler, place chocolate in a bowl over boiling water, blend until melted. Using a pastry brush, brush the melted chocolate onto the base of the tarts. Set aside
- In a small skillet add coconut, cook on medium heat until golden, stirring constantly
- In a bowl place pastry cream, blend lemon rind, coconut, and passion fruit juice together
- Fill the tarts with the mixture. Can be garnished with fruit if so desired
