Fresh Oysters on the Half Shell, Au Natural with a Red wine Vinegar, Minced Shallots and Fresh Herbs

Ingredients:

  • 12 fresh oysters, half shell
  • 50 ml red wine vinegar
  • 3 shallots, minced
  • red chilli flakes
  • lemon wedges
  • sea salt
  • fresh cracked pepper
  • 1 tbsp. Flat leaf parsley, chopped
  • crushed ice

Directions:

  1. Prepare the vinegar; in a small bowl place vinegar, salt, pepper, chillies, parsley, and shallots. Whisk. Put aside.
  2. Set 2 plates; place crushed ice on the plates.
  3. Place 6 half shelled oysters on the ice.
  4. Place the vinegar in small ramekins and in the centre of the plate.
  5. Serve with lemon wedge
