Honey Glazed Roasted Sweet Potatoes
Ingredients:
- 2# sweet potatoes
- 2 tbsp butter
- sea salt
- fresh cracked pepper
- 2 tbsp flat leaf parsley, chopped
- 4 tbsp pure honey
- 1-2 limes, juiced
- 1 tbsp ginger, minced
Directions:
- Preheat oven to 375’f
- Place sweet potatoes on a baking sheet. Cook until fork tender
- Split the potatoes with a knife and remove the “meat”
- Place the meat in a bowl. Add lime juice, ginger, honey, butter, and seasoning, blend
- Place in the oven for 10 minutes. Garnish with chopped parsley.
