Baked Yams with Lime and Honey
Ingredients:
- 3 large yams
- 6 tbsp. Honey
- Salt/fresh cracked pepper
- 4 limes, juiced
- Pinch nutmeg
- 1 1/2 cups water
- Sour cream for garnish
- 2 tbsp. butter
Directions:
- Preheat oven to 375’f
- Wash yams and place in a baking dish with the water
- Bake until the yams are soft, approx. 1-11/2 hours
- Peel the yams and place in a baking dish
- Add the honey, butter, nutmeg, lime juice, salt and pepper
- Mix well and mash with a potato masher
- Cover with foil and return to the oven for 15 minutes
- Evenly spread with sour cream
