Baked Yams with Lime and Honey

Ingredients:

  • 3 large yams
  • 6 tbsp. Honey
  • Salt/fresh cracked pepper
  • 4 limes, juiced
  • Pinch nutmeg
  • 1 1/2 cups water
  • Sour cream for garnish
  • 2 tbsp. butter

Directions:

  1. Preheat oven to 375’f
  2. Wash yams and place in a baking dish with the water
  3. Bake until the yams are soft, approx. 1-11/2 hours
  4. Peel the yams and place in a baking dish
  5. Add the honey, butter, nutmeg, lime juice, salt and pepper
  6. Mix well and mash with a potato masher
  7. Cover with foil and return to the oven for 15 minutes
  8. Evenly spread with sour cream
